Downtown Snoqualmie gained a brand new restaurant last month when Copperstone Family Spaghetti Restaurant opened its doors on Railroad Avenue.
Opened on Dec. 1 by Snoqualmie residents Troy Bacon and Adriana Jordan, Copperstone is designed to be affordable and welcoming to families.
“The concept was just to create a family-friendly pasta house for a lower price that provides the opportunity for the families in the Valley here to enjoy bringing their kids and everyone in at a reasonable price,” Bacon said.
With Jordan’s family history in restaurants and a lack of a lower-price family pasta house in the area, they decided to start their business.
“Adriana has been in the restaurant business and her family has for 20-plus years locally,” Bacon said. “There is always the unexpected when you open up anything new so it’s been challenging getting everything in a row, but we have great staff here and operationally it’s been very sound and we’ve been fortunate that the community has been very receptive to what we offer so far.”
Once Bacon and Jordan came up with the initial idea for the business, they began looking for locations. They found the spot between S.E. King and River Streets, and were able to do a remodel and open their doors within a couple of months.
“It’s one of those situations where you are in the right place at the right time, we were fortunate that things fell into place and we were able to get this good location for our place,” Bacon said.
Since opening Dec. 1, Bacon said, “so far it’s been good. We are able to provide lunch to some of the local businesses and residents here and on the weekends we are able to fulfill not only the local residents but also the tourists that are enjoying the newly remodeled street out here.”
Copperstone serves a variety of pasta dishes like slow-cooked spaghetti and meatballs, bacon and mushroom tortellini and baked ziti. Jordan said that their meatballs and sauces are all prepared from scratch in house. In fact, the meatballs are one of the best selling items on the menu.
“Our best seller so far is our meatballs,” Jordan said. “The bacon mushroom tortellini is really popular and my favorite is the lasagna.”
Along with a new chef putting his personal spin on some of the dishes, many of the items on the menu were chosen because they were family recipes that they loved.
“Some of it is family recipes, so we are able to put a personal touch on everything,” Bacon said, while keeping prices down. “We are fortunate enough to have a chef … who has really taken the lead. He comes in and preps all the food and puts his personal touch on it.”
Bacon said that residents have been very good to them in their first month of business. Not only do they come out to try the new restaurant, but they also return with their families.
Bacon and Jordan are also using Copperstone to support schools. They donate 20 percent of proceeds from the last Thursday of each month to Snoqualmie Elementary through the PTSA’s Restaurants Give Back program.
“We have kids here in the school community so we are tied to the Valley. It’s good to give back to the community a little bit,” Bacon said.
